Recipe: South GA Pool Hall Chili Dogs
Directions:
Step 1: Add ground beef to a deep skillet or pot. Add water until beef is fully covered and bring to a boil, stirring with a slotted spoon to break beef up into very small pieces.
Step 2: Let beef boil on medium high heat for 15 to 20 minutes, then bring the temperature down to a simmer.
Step 3: Skim off most of the fat from the water, then add fresh water to cover the beef again.
Step 4: Once new fresh water is added, stir in salt, pepper, onion powder, Red Dirt and chili powder. Simmer on low uncovered for 2 hours.
Step 5: Grill, fry or boil your favorite hotdogs. Put them in your bun of choice and top them with a large spoon of chili, diced sweet onion, mustard and a dash of Swamp Sauce.
This recipe was inspired by the chili dogs from the South Georgia Pool Halls in Thomasville and Cairo, GA. They are still one of my favorite indulgences!
